Current blueberry bruise evaluation techniques rely on visual size estimation and firmness measurements. A “gold standard” for characterizing bruises has yet to be found. As bruises cause changes in the concentration and distribution of water in fruit tissues, and as MRI is a technique which is very sensitive to water distribution and concentration, it is hoped that MRI images of blueberries can provide a thorough characterization of blueberry bruise properties such as volume and severity.
